Harrison came home with us this morning. Before the storm fully sets in I decided to make us as yummy a lunch as I could muster. Wonderful tomatoes, mozz, basil, pesto, salt and pepper. Success.
My mom did a wonderful job of using just about every leftover in the fridge in this amazing frittata. Tomatoes from Pomodori al Forni were the perfect touch. A great lunch before our T-giving walk and then big dinner.
I made this ahead yesterday for today’s lunch. A great and easy recipe that gets better with time in the fridge form Jack Bishop’s Year in a Vegetarian Kitchen cookbook. Added leftover spicy Italian sausage and home made breadcrumbs. Off to Locanda for dinner.
