Harrison came home with us this morning. Before the storm fully sets in I decided to make us as yummy a lunch as I could muster. Wonderful tomatoes, mozz, basil, pesto, salt and pepper. Success.
It is a rare event in the Knavis Knitchen when Robin cooks. It is even rarer when Robin eats eggs. Get this….she cooked eggs. And she liked them! Go, Robs!
Cheesy Egg Casserole on Baking Bites
I made this ahead yesterday for today’s lunch. A great and easy recipe that gets better with time in the fridge form Jack Bishop’s Year in a Vegetarian Kitchen cookbook. Added leftover spicy Italian sausage and home made breadcrumbs. Off to Locanda for dinner.
